KATILETTES’ FABULOUS CHICKEN ENCHILADAS!

Ingredients…

  • 2 cans cream of chicken soup
  • 1 small can green chilies chopped
  • 1/2 pint sour cream
  • 2 dozen flour tortillas or less depending on how full you stuff them.
  • 1 lb grated cheese (I know a lot of cheese huh? Yum!)
  • 4 to 6 chicken breasts or thighs (chicken breasts will be less fat but in our opinion thighs make them taste much better!)
  • Seasonings= Rotisserie chicken seasoning, Onion powder, salt and pepper.

Directions…

Cut chicken into small pieces and cook in frying pan with a little bit of oil or butter until the chicken is cooked. While cooking the chicken season with rotisserie chicken seasoning (any brand) and sprinkle salt. I never measure the seasonings I just go until it tastes good but be careful not to put too much. In a separate bowl mix soup (don’t add water), sour cream, green chilies, onion powder and salt to taste. Then in each tortilla place a line of chicken and cover with soup mixture and cheese fold the ends in and roll. Place them in a 9in by 13in pan cover with remaining soup mixture and cheese. If you are using all 2 dozen tortillas then you may need a second pan. Place aluminum foil over the pan and cook at 350 degrees for 20 to 30 minutes until warmed all the way through. Let cool slightly and enjoy!
